BANANA BREAD BITES 🍌

Who’s got ripe bananas to use? These are like a cross between banana bread and scones 🙏🏼 I added cinnamon and they are so so delicious, makes for a great snack! I cook them in the air fryer and they’re best served fresh because they do harden up the next day.

Here’s the recipe ⬇️
Makes about 12

▪️2 medium ripe bananas
▪️30g soy milk
▪️5g vanilla extract
▪️180g self raising flour
▪️20g maple syrup
▪️1/2 tsp cinnamon

1️⃣ Add bananas to a large mixing bowl and mash with a fork.
2️⃣ Add milk and vanilla, continue to mash and combine together.
3️⃣ Add the flour, maple syrup and cinnamon. Stir together with the fork until you have a very soft dough like consistency. It will be sticky but that’s what we want.
4️⃣ Cover and let it sit for 15 mins. You can preheat your oven or air fryer to 180°C during this time.
5️⃣ I lined the air fryer with baking paper, then using my fingers I scooped about 1 tbsp of the mixture and placed it down onto the tray, it is too sticky to roll into balls to placing a small chunk down with fingers works really well.
6️⃣ In air fryer I baked for about 5 mins until golden brown on top, gently flip them over and bake for a further 2-3 mins on the bottom, pull them out and use a small knife to piece the bottom of each. Return to air fryer or oven and bake for a further 3 to 4 mins. This is so the inside cooks.
7️⃣ Repeat with any remaining mixture and serve, best when they’re still warm 🥰

▪️ If baking in the oven I would still go with 180°c, once golden brown on top you can flip them and pierce them why they start to harden up a little.
